RB:What is Quelle Cuisine and how did you start?
QC: Quelle Cuisine Inc. produces authentic French macarons. I have always had a passion for cooking and food therefore when living in France and Belgium for several years I attended many culinary schools. While still in Brussels I taught cooking classes regularly and when I repatriated in 2010 I wished to continue sharing my passion. The Village Grocer in Unionville was opening it's new location and with my resume I attached a sample of my macarons. They were pleased and I began to supply them with product as well as teaching classes in their cooking studio. That was over three years ago and since the macarons have become my focus.
QC: What I love most about my job is the endless possibilities! The ability to create something so lovely and delicious is so rewarding. Being able to share my creations is the greatest pleasure of any chef!
QC: Macarons are so complex and variable, they are challenging and when you've mastered them it's a great sense of accomplishment. Holding them in the palm of your hand like a jewel is the best...next to devouring them of course! I enjoy all aspects of cooking not only baking and miss teaching classes and sharing my knowledge.
RB: If you had to eat only one cuisine for the rest of your life what type would you choose?
QC: What to choose? French cuisine is simply glorious but I cannot disregard my Italian heritage so it's a tie!
